Apple + Hemp

APPEARANCE
Medium pale yellow, gently cloudy. The cork is too short and dried out on top. The new batch will definitely have a longer and slightly wider cork.

AROMA
This is a blind analysis, but it seems to me that quince has been added to the apple, because such a strong quince aroma comes with the first sip. The back aroma is sweet apple and at the end, white currant and the aroma of large white matchsticks.

TASTE
Sweet and gently bitter from the added quince. But this balance is ideal in my opinion. Acids also open up in the aftertaste and I can recognize the malic acid and sour quince separately.

I tested the taste both at refrigerator temperature and at room temperature. I am convinced again and again that deeper and more complex flavors open up better at room temperature, like in this wine. The taste itself is intense and the nuttiness of the apple seed and the quince seed pod remains in the aftertaste.

This is a powerful wine that is sweet and bitter and quietly acidic. Very well done.

SUMMARY
The tester wants to know how to proceed from here? Start making exactly the same one right away!! I really liked the power and richness of this wine. And the balance of both the apple and the quince is well established. I would always include this wine in the Cider House selection.

Rhubarb + hemp

The aroma is of potatoes fried in butter, and then the sweetest aroma of oil hemp. Later, the smell of hairy, just washed apricots, so that you can feel those apricot skin hairs in your nose. I really don't know where these associations come from.

Something very interesting is happening in the taste: as if quince is coming from the background, oxalic acid remains at the end, but the first landing is still mild and very intriguing.

SUMMARY: go ahead with it. But I would also try hemp with an apple base wine in the same ratio.
